Quince Tarte Tatin

 A friend has a quince tree at her weekend house, but she just doesn't care for quince! She says she's tried it all - jams, cakes, etc, but it just doesn't hit the right note. 

But like so many, she just hates to throw things away, so she offered quince to me and others. Well, OK. I have had quince jelly, brought on biking trips from tables set up outside farm houses. It was good.


But the fruit are a bear! Hard as a rock, difficult to peel have to be cooked FOREVER to soften and get done. But as it happens, good old David Leibovitz had just sent a recipe for Quince Tarte Tatin, so why not give it a try. 

It's not really a Tarte Tatin - there's no caramelizing with butter, but the quice (quinces?) cooked in a vanilla-infused syrup smelled yummy.

When they were finally done, I cooked down the syrup till it was really syrupy, then put the pastry on top and baked it. 

Looks good, doesn't it???  The chief taster around here checked it out, and indeed, it is yummy. Ice cream is nice with it, too.
