We've already given away half of the apples. Eaten a few. They are mostly s o u r, which I like very much, but how many apples a day can one eat?? These are called August Apples and they don't keep, as in after about two days off the tree they start to rot. You have to work fast! The ones we don't eat will be applesauce, maybe to put on a potato fritter or two! Oh, yum.
But the zucchini, well, there was a lot to do with it - it was rather large.
First, zucchini fritters. Shred, squeeze, mix with egg and onion and flour and fry. A little horseradish sauce on the side is not bad.
Second, make a cake. Monday a whole passel of folks - my Monday English class - are coming over and who doesn't like cake? So here it is, recipe from David Liebovitz and I can highly recommend you make this.
Finally, stuffed zucchini. Stuffed with bulghur, assorted veggies, feta, pine nuts, Parmesan on top. I can highly recommend. Oh, I said that already.
Along with the stuffed zucchini we had tabouleh, one of my favorite salads - lots of chopped parsley, some chopped tomatoes, mint, spring onions, the bulghur, lemon and olive oil. It's a summery meal, and though summer has only been at our house here and there, it still reminds us it is that time of year!
