It's about over, this pandemic (we hope), and it has changed so many things. We always cook a lot at home, but that has been true even more this last year plus. Sometimes I get tired of cooking, but mostly it has been interesting. What doesn't change is that we try to eat with the season.
And this is Spargel Saison - Asparagus Season. We eat it a lot during these few weeks and sometimes Werner thinks too much, but we have to do it while we can.
There's the usual asparagus with ham of course and we love that at the beginning.
But I want somethings different at the end of the season. So first: Spargelsuppe. Asparagus soup.
This time, the asparagus was sauteéd and caramelized after the base was made and we yummied it up. There's not much need for more, but a salad and crusty bread is nice.
More! How about a tart of asparagus? Good stuff: I can do pastry really well these days since I have had lots of practice. A buttery, flaky base for asparagus in a custardy bed. I wasn't sure I'd love it, but it was very loveable.
And finally, fried asparagus. But not alone. No, no, no. We're talking Switzerland here and Spargelrösti - a sort of hash browns of asparagus and potatoes.
Well, we were surprised at ourselves. What a yummy treat! Put some smoked salmon on top and you have a feast of the senses. The créme fraîche on top was also not bad.
Tonight we had the last bits of asparagus in a salad, tossed with a lemony vinaigrette and some parmesan cheese on top. No pics, sorry.
So, Spargel ist vorbei, asparagus season is over, but we are already looking forward to next year!!
